I currently have a 2002 SeaRay 560 Sedan Bridge. I have traveled the Great Lakes extensively with a family of 5. I am looking at going a bit bigger 60-65’ and 2015 or later. I have considered Sunseeker, Monte Carlo, Viking, Hatteras, and Fairline. I am not an Azimut or Princess fan. Our primary use is travel and weekend getaways in the summer. We enjoy being outside on the water so the more seating/open space the better. I am looking for any recommendations/experiences that would help in my search. Any year/model I need to stay away from due to know issues? Also is there a boat I am overlooking?

Enjoy the process! it sounds like you have. A big question answered: how do you want to use the boat and where. Good stuff.
    What about a SeaRay 650?

In that year range, if shopping for N. America located boats I think you have listed many.
Here are some I would check out.
Although I don’t really want Volvo IPS, the list can get smaller.
    Ferretti
    Absolute
    Galeon
And you may want to scope out some power cats that have massive space for your stated purpose too.

The Sunseeker 66' Manhattan is one heck of a seaboat (with the sidepower stabilizers). It has tons of outdoor areas, 4 real staterooms/3 head and a crew stateroom and head for 2. That is what I would consider in that size range first. Hatteras 60' is also a good choice. I wouldn't consider Monte Carlo or Fairline and Viking doesn't make anything that size that is not a Princess.
