New holding tank: Stainless steel or plastic?

I got a plastic tank 15 years ago from: https://www.oceanlinkinc.com/marine-tanks/holding-tanks-water-tanks I like how they will install the fittings exactly where you need them. Great for a refit. Been trouble free all these years. An option to consider.

I installed one to avoid the holding tank/metal boat dilemma. I use a small plastic tank as a lift station with an automatic float switch and high level alarm. The A-Head system sits up and gravity drains overboard. It's plumbed to the deck fitting for pump out and can be locked off and staged as a holding tank if I'm ever in zero-discharge waters. But the system kills all material and discharges an inert product. Takes up some space and not exactly light, but it's a fairly bulletproof system. End result yields auto inert discharge coupled with the ability to function as a holding tank while keeping the moisture and waste off the hull where epoxy barriers or even rubber liners will eventually fail and activate hull electrolysis.

Where's my issue of oversight? What did I miss?
